COPPER DAGGER IS THE PERSONAL BAR CONCEPT OF OWNER AND OPERATOR TREY REIMER — SHAPED BY MUSIC, MENTORSHIP, CLASSIC COCKTAILS, AND MORE THAN A DECADE BEHIND THE BAR.
The name “Copper Dagger” comes from one of Ira Koplowitz’s original cocktails. It’s an homage to the person who encouraged Trey to step outside his comfort zone, introduced him to the craft, and helped shape the path that eventually led here.
Copper Dagger carries that spirit forward — personal, intentional, and rooted in respect for the people and places that made it possible.
Copper Dagger also carries a connection to Scratch through Brady Sexton, owner of Scratch and Trey’s partner in Scratch Bottled Old Fashioned. Brady continues to support the concept as a consultant, helping shape Copper Dagger while allowing it to stand as something smaller, more intimate, and distinctly its own.
Like Scratch, Copper Dagger focuses on pre-Prohibition cocktails. The bar is built on fresh juice, house-made syrups, infusions, and high-quality spirits — the details that create balance, depth, and a better drinking experience.
Our food menu is designed to be flavorful, social, and memorable. Inspired by European street food, Copper Dagger serves dishes like smoked salmon tartine, charcuterie, chopped Italian sandwiches, and salted caramel gelato.
Inside, Copper Dagger offers just 30 seats, creating a close and intentional experience for guests. A covered patio along 16th Street is planned. The vibe is laid-back, the music is considered, and the energy builds as the night goes on.
Copper Dagger is a cocktail bar with a deep respect for the craft. Come for the classics and stay for the easygoing energy and community feel.
